Frönsk súkkulaði kaka

 

* 200 gr smjör.
* 200 gr suðusúkkulaði.
* 4 egg.
* 3 dl sykur.
* 1 dl hveiti.
* 100 gr herslihnetur hakkaðar.

Kremið

* Matreiðslurjómi.
* 2 stk. Mars súkkulaði.
* 1 plata af suðusúkkulaði.

Matreiðsla

1. Smjör og suðusúkkulaði sett í örbylgjuofn og síðan kælt.
2. Eggjunum og sykrinum er þeytt vel saman og síðan er blöndunni af smjörinu og suðusúkkulaðinu bætt út í. 
3. Loks er hveitinu og herslihnetunum bætt smátt og smátt út í.
4. Fatið er smurt smjöri og hveiti og er kakan síðan bökuð við 180°C í 30-35 mín.

Kremið

* Kremið er brætt og hrært saman líkt og íssósa.
* Þegar kakan er fullbökuð er kreimið sett á kökuna á meðan hún er enn heit. Gott er að leyfa kökuni að sjúga dálítið af kreminu í sig.

Gott að bera kökuna fram með ís og jarðaberjum.

Kúrbíts-súkkulaðibrauð


  • 350 g kúrbítur, grófrifinn
  • 200 g steinlausar sveskjur, mjúkar
  • 125 g smjör, lint
  • 3 egg
  • 100 ml nýkreistur appelsínusafi
  • 1½ tsk vanilluessens
  • rifinn börkur af 1 sítrónu
  • 250 g heilhveiti
  • 40 g kakóduft
  • 2½ tsk lyftiduft
  • 1 tsk matarsódi
  • ½ tsk kanell
  • ½ tsk salt
Hitaðu ofninn í 165°C. Pressaðu eins mikinn safa úr kúrbítnum og þú getur, t.d. með því að setja hann á viskastykki og vinda það vel. Maukaðu sveskjurnar í matvinnsluvél og hrærðu smjöri og eggjum saman við og síðan appelsínusafa, vanilluessens og sítrónuberki. Hrærðu afganginum af þurrefnunum saman við. Blandaðu að lokum kúrbítnum saman við með sleikju. Settu deigið í jólakökuform og bakaðu brauðið neðst í ofni í um 50 mínútur, eða þar til prjónn sem stungið er í það kemur hreinn út. Láttu það kólna dálítið í forminu en settu það svo á grind.

Roasted Shrimp With Feta (Serves 4)

4 tablespoons good olive oil, divided 
1½ cups medium-diced fennel 
1 tablespoon minced garlic (3 cloves) 
¼ cup dry white wine 
1 (14½-ounce) can diced tomatoes 
2 teaspoons tomato paste 
1 teaspoon dried oregano 
1 tablespoon Pernod 
1 teaspoon kosher salt 
½ teaspoon freshly ground black pepper 
1¼ pounds (16 to 20 per pound) peeled shrimp with tails on 
5 ounces good feta cheese, coarsely crumbled 
1 cup fresh bread crumbs (see note) 
3 tablespoons minced fresh parsley 
1 teaspoon grated lemon zest 
2 lemons 


Preheat the oven to 400 degrees. 

Heat 2 tablespoons of the olive oil in a 10- or 12-inch heavy ovenproof skillet over medium-low heat. Add the fennel and sauté for 8 to 10 minutes, until the fennel is tender. Add the garlic and cook for 1 minute. Add the wine and bring to a boil, scraping up any browned bits. Cook for 2 to 3 minutes, until the liquid is reduced by half. Add the tomatoes with the liquid, tomato paste, oregano, Pernod, salt, and pepper to the skillet. Simmer over medium-low heat, stirring occasionally, for 10 to 15 minutes. 

Arrange the shrimp, tails up, in one layer over the tomato -mixture in the skillet. Scatter the feta evenly over the shrimp. In a small bowl, combine the bread crumbs, parsley, and lemon zest with the remaining 2 tablespoons of olive oil and sprinkle over the shrimp. 

Bake for 15 minutes, until the shrimp are cooked and the bread crumbs are golden brown. Squeeze the juice of 1 lemon over the shrimp. Serve hot with the remaining lemon cut into wedges.

  • 3 egg
  • 1 bolli kotasæla
  • 1 tsk vanilludropar
  • 2 msk hunang eða agave síróp
  • ½ bolli hveiti
  • 1 tsk lyftiduft
  • ¼ tsk salt
  • smjör, olía eða olíusprey
Setjið fyrstu 4 hráefnin í skál og hrærið þeim saman. Bætið þurrefnunum saman við og hrærið saman.
Kotasælupönnukökur
Hitið pönnu við miðlungsháan hita og setjið smá af olíu eða smjöri á pönnuna. Setjið um 1 msk af deiginu á pönnuna fyrir hverja pönnuköku.  Steikið í 2 mínútur á hvorri hlið, eða þar til pönnukakan er gyllt á lit og steikt í gegn.

  1. In a large saucepan, combine sugar, cornstarch, salt and milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from heat. Stir a small amount of hot filling into eggs; return all to pan. Bring to a gentle boil; cook and stir 2 minutes longer.
  2. Remove from heat. Gently stir in butter and vanilla. Press plastic wrap onto surface of custard; refrigerate, covered, 30 minutes.
  3. Spread half of the custard into pastry shell. Slice bananas; arrange over filling. Pour remaining custard over bananas. Spread with whipped cream. Refrigerate 6 hours or overnight. Yield: 8 servings.

  • YIELD: MAKES ONE 9-INCH PIE

  • INGREDIENTS

    • All-purpose flour, for dusting
    • 1/2 recipe Pate Brisee
    • 1 large whole egg, lightly beaten, plus 4 large egg yolks
    • 6 to 8 medium-ripe bananas
    • 3 cups whole milk
    • 2/3 cup granulated sugar
    • 5 tablespoons cornstarch
    • 1/4 teaspoon salt
    • 1 cup heavy cream
    • 2 tablespoons confectioners' sugar
    • DIRECTIONS

      1. Preheat oven to 375 degrees. On a lightly floured work surface, roll out dough to a 12-inch round, a bit less than 1/4 inch thick. Fit dough into a 9-inch pie plate. Using kitchen shears or a sharp knife, trim crust so there's a 1/2-inch overhang all around. Fold under overhang so it extends slightly beyond edge of pie plate. Crimp edge as desired. Prick dough all over with a fork. Brush rim of dough with beaten egg. Chill pie shell until firm, about 30 minutes.
      2. Line chilled pie shell with a round of parchment paper, leaving a 1-inch overhang. Fill with pie weights or dried beans. Bake until edges of crust just turn golden, 25 to 30 minutes. Remove pie weights and parchment. Return crust to oven, and continue baking until golden all over, 20 to 25 minutes more. Place pie shell on a wire rack to cool completely.
      3. Prepare an ice bath; set aside. In a bowl, lightly whisk egg yolks; set aside. In a saucepan, whisk together milk, granulated sugar, cornstarch, and salt. Bring to a simmer (do not boil), and cook, whisking constantly, 3 to 4 minutes.
      4. Whisk a quarter of hot-milk mixture into egg yolks; whisk in remaining milk mixture. Strain into a clean saucepan, and cook over medium-high heat, whisking constantly, until custard is thick and bubbles appear in center, 2 to 3 minutes. Transfer to a medium bowl, and cover with plastic wrap, pressing it directly onto surface to prevent a skin from forming. Set in ice bath until completely chilled, 30 to 35 minutes. (Filling can be kept in refrigerator, covered with plastic wrap, up to 1 day.)
      5. Cut 3 or 4 bananas into 1/4-inch slices, slightly on the bias. Beginning at the edge of the piecrust, arrange the slices in slightly overlapping rows. Cover with custard, using an offset spatula to smooth it into an even layer. In the bowl of an electric mixer fitted with the whisk attachment, combine cream and confectioners' sugar; beat until soft peaks form. Using a small offset spatula, spread the whipped cream on top of the custard. Refrigerate pie, loosely covered with plastic wrap, for at least 1 hour or up to 2 days.
      6. Just before serving, cut 3 or 4 bananas into 1/4-inch slices, slightly on the bias. Beginning at the edge of the piecrust, arrange the slices in slightly overlapping rows on top of the whipped cream.

Kjúklingasúpa með tómötum, karrý og epli

Kjúklingasúpa með tómötum, karrý og epliÞegar það er svona dimmt og kuldalegt úti þykir mér notalegt að kveikja á kertum og bjóða upp á góða súpu og brauð. Slíkar máltíðir gera lífið svo ljúft. Þessi súpa er þó einstaklega ljúf því hún er í senn æðislega bragðgóð, ofboðslega einföld og sérlega fljótgerð.
Það er upplagt að gera vel af súpunni og frysta í einstaklingsskömmtum því það er svo gott að geta tekið hana með í nesti eða gripið til hennar eftir langan dag.  Dásamleg máltíð sem vert er að prófa.
Kjúklingasúpa með tómötum, karrý og epli
Kjúklingasúpa með tómötum, karrý og epli (uppskrift frá Arla)
  • 300 g kjúklingabringur
  • 1 laukur
  • 1 epli
  • 1 msk karrý
  • 2 dósir niðursoðnir tómatar (samtals 800 g)
  • 1 dl vatn
  • 2 grænmetisteningar
  • 2 ½ dl rjómi
  • smá sykur
  • salt og pipar
Skerið kjúklinginn í litla bita, fínhakkið laukinn og rífið eplið. Steikið kjúklinginn, laukinn, eplið og karrý í smjöri þar til mjúkt. Bætið tómötum, vatni, grænmetisteningum og rjóma saman við. Látið sjóða í 5 mínútur eða þar til kjúklingurinn er fulleldaður. Smakkið til með smá sykri, salti og pipar.
